Vacation recipe ideas

We are going to the beach for a week in July. We do eat out some, but with it being expensive to eat out with five people, I try to cook as much as I can :)

Do you have any healthy, quick and easy recipes that would satisfy both adults and children? My youngest son has a peanut and tree nut allergies, so nothing with nuts at all. We can't even eat them around him because he starts having breathing issues.

I am taking my Crock pot so I won't be slaving over a stove alot...so, if you have anything good for that, please pass it on :)

    So far, I have got (for lunches):
    Blt's, Quesadillas (chicken, veggie and cheese), slider burgers, slow cooker hawaiian meatballs over rice (with veggies)

    (Dinners)
    BBQ pulled pork sliders, slaw
    Picadillo on low carb tortillas and queso for the hubby and kids
    Baked (home made) chicken nuggets w/ mashed potatoes and veggies
    Slow cooker barbacoa pork w/ rice and black beans and veggies on the side

    I love to make hummus pizzas. Take a piece of nan, add your favorite hummus and a ton of veggies! I add spinach, bell peppers, cherry tomatoes, onion..and whatever else I have in the fridge. It is quick, easy and great if you need something light.

    These baked chimichangas are great too. They are super easy to make. As a side, I will have shredded lettuce, black beans, avocado, salsa..etc.
