    I saw you posted in another thread about lunches since you were getting bored, but I thought I'd answer here so as to not clutter up the other thread.

    I personally have access to a microwave, so I just bring dinner leftovers. I'm actually rather lazy, so I cook in huge batches on the weekends (or use a crockpot during the week), and then portion everything out and freeze in individual servings.

    Some things I regularly make:
    Italian stew (pasta sauce with tons of veggies and usually both Italian sausage for flavor plus a leaner source of protein like shredded chicken or ground venison)
    Green chili stew (pork)
    Venison stew
    Brunswick stew
    Regular old chili (as opposed to all the other variations)
    Pumpkin chili
    Buffalo chicken dip
    Enchilada casserole (rolling them takes too long, so I just layer)
    pulled pork/chicken sandwiches
