Chicken Chorizo Breakfast Quesadilla
(Only 4 carbs and packed with flavor)
Low carb lavish bread cut in half
Chicken chorizo
Egg whites
Cheese of your choice
Diced bell pepper and onion
Topped with poco de gallo
Sauté chicken chorizo, bell peppers and onions together in skillet until almost done add egg whites and cook until done. Take half of lavish bread place in a non stick skillet and sprinkle with cheese, place your chorizo meat mixture on top and add a second layer of cheese then fold closed. cook until golden brown on both sides.

    Where do you purchase your chicken chorizo? I hear about it but I NEVER see it.

    There's a product called Soyrizo that is meatless and somehow delicious. Even my tofu hating, non veggie eating husband loves it!

    If you have a Trader Joe's near you, their soy chorizo is MUCH cheaper than the regular grocery store.
