healthy food for the whole family?

http://www.100daysofrealfood.com/2011/02/25/recipe-the-best-whole-chicken-in-a-crock-pot/ this is a recipe I made yesterday for dinner last night. It was delicious and healthy, the chicken literally fell off the bone. Best of all my husband and son enjoyed it too. I Struggle Finding and cooking things my husband will eat. Usually he will say "I'll just have peanut butter and jelly. " which makes me so crazy!!! So if anyone has any healthy husband approved recipes they can share I would be so grateful! Even better is if they are something I can prep the night before or are quick as I also work full time.

    My husband is the less picky person I have ever met, you would cat food if this is what was served to him, so I have no idea what a husband approved recipe is. But, I am pretty sure I cook healthy, so if you post what your husband likes eating in general, I might be able ot help with healthier versions.

    Plan, prep and prepare your meals a head of time.. talk to your husband a head of time.. get creative and there are a ton of recipes all over the place for you to pick and choose from based on the ingredients and types of meals you husband and son may like..

    The crockpot can be your best cooking buddy....

    Mine is not picky at all. He will eat anything I put out and takes turns cooking dinner as well. What I would do in your situation, is stick with the things you know he'll eat and healthy them up. I don't know how to classify a 'husband approved' recipe. Sorry. My sister in law is the pickiest eater i've ever ever met, and I just don't understand it.

    What are some things he likes to eat?

    I have a cousin who eats peanut butter and jelly every single day. Every family cookout, instead of hamburgers and hotdogs, his mom, (then his wife when he got older) would pack him 2-3 pb&j. That's just silly.

    I recently gave up gluten (digestive troubles) and have been really missing macaroni and cheese, especially my homemade casserole recipe. I found a recipe for a cheddar quinoa broccoli bake, and it's a reasonable facsimile! I assume that since hubs likes pbj, he probably likes mac n cheese?

    Mine likes everything too, but he loves this Carne Guisada (Latin beef stew). It's the best!

    I also like to make homemade freezer burritos, burgers, meatloaf, nuggets, meatballs, chili, soup, etc. I have certain staples that I keep cooked in my freezer for any of us to have a quick meal, including the child. All I do is use leaner meats and incorporate 50% non-starchy vegetables into all of the meals - puree, shred, food process them. Voila, you've made it healthier because the serving size stays the same, but the calories are lower per serving.

    Healthy means different things to different people. Maybe explain what your criteria are more specifically.
    My dh eats most things happily. My dd is the harder person to cook for.
    My picky dd doesn't like to try new things much. She is suspicious of certain seasonings. She likes soups and stews like minestrone, fassolatha, chili, beef stew. She likes bread, pasta and rice. She likes cheeseburgers or veggie burgers. She likes oatmeal, pancakes, French toast and eggs. She likes pork chops, ham, roast beef. She likes beef tacos, gyros, chicken fried rice. She loves fruit. If she eats some protein, a fruit or vegetable, maybe some dairy I generally think she is eating okay at a meal.

    Eating Well has tons of free recipes - 3 bean chili was an all around hit
    - breaded baked chicken tenders was a hit with the kids but my husband didn't like it as much
    - the Parmesan cheese crusted pork chops were a hit all around plus some truly picky nieces and nephews

    Some kind of meat, poultry, or fish on the grill. A side of baked potato, or roasted potato, or brown rice, or corn, etc. Side of veg of some kind.

    I'm the primary cook in my home and the above is pretty typical for me and the whole family.
