Salad Pie

Our favorite go-to meal these warm days is what we affectionately call 'salad pie'. We put down on a large platter a large amount of mixed greens and top with rows (strips/wedges) of our favorite veggies, and such. Think a cobb salad, but with what ever you like. Tonight we did some left-over clean up. The 'pie' ingredients on top of our salad greens in neat rows were: sliced hard boiled egg, avocado, carrots, sliced lean steak, tomatoes, bell peppers, and snap peas. Total kcal...@ 350. (This includes the 1/2 oz of bleu cheese crumbles I threw on mine.). Must post a pic, but we gobble it up too fast. It's my 4 year olds favorite supper. I have mine with a very good balsamic vinegar...no oil (none needed).
