Hey, my name is Stephanie, and I just recently graduated from a culinary program at my local college. I love coming up with recipes that have a healthy twist to them. If you're interested, add me as a friend, and either way, I'll probably end up posting them here too!
Stuffed mushrooms ( only 125 calories)
Ingredients:
3 medium-large white button mushrooms
1 teaspoon of Parmesan cheese
1/2 teaspoon of garlic, finely chopped
1 teaspoon of coconut oil
1 tablespoon and 1 teaspoon of seasoned breadcrumbs
Method:
1. Taking your three mushrooms, thoroughly wash them to get rid of any dirt.
2. Remove the stem of the mushrooms, and set the mushroom caps to the side.
3. Finely chop up the mushroom stems.
4. Place your sauté pan on your stove over medium-high heat.
5. Once your pan is hot add in your coconut oil, mushrooms and garlic. Sweat out the mushrooms until a golden-brown colour, or until desire.
6. Once browned, remove the pan from the heat and add the breadcrumbs and cheese. Stir around.
7. On a baking sheet, place the mushroom caps on the sheet, and carefully stuff the mixture into the mushroom caps.
8. Place in the oven with the broiler set on high, for about 10minutes. Use an aluminum foil tent, if needed.
