Slow Cooker Chipotle Pork........ Being served with Skinny Taste Cilantro Lime Rice......Only appx 344 calories for the meal!!


Slow Cooker Chipotle Pork

Ingredients

3 lbs. boneless pork roast
½ tsp salt
2 4 oz. cans mild diced green chiles
4 cloves garlic, minced
1 onion, chopped
juice of 2 limes
¼ C chipotle sauce or blend up canned chipotle peppers to equal ¼ C
½ C water
1½ tsp cumin
½ C cilantro, chopped
More cilantro for garnish


Instructions

Place pork in slow cooker and season with salt.
Add in chile peppers, garlic and onion on top of pork.
Mix together chipotle sauce and ½ C water, pour over pork.
Cook on low for 6-7 hours until pork is tender and easy to shred with a fork.
Remove pork and shred with a fork, place back into slow cooker.
Add 1½ tsp cumin and ½ C chopped cilantro.
Stir and allow to simmer for about 30 minutes giving the pork time to absorb some of the juices.
Serve as a burrito, taco, enchilada etc

    Turkey burgers with Dubliner cheese, sauteed summer squash and asparagus. I might add some quinoa, too.

    Marinated oven roasted chicken breast, oven roasted rosemary potatoes and broccoli.
    (MFP really makes me think about getting a crock pot/slow cooker soon, all the recipes sound so good and easy!)

    my homemade grilled shrimp taco salad:

    2 cups leafy romaine, 4 oz shrimp, 1 oz shredded cheese, 2 tbsp black beans, 2 tbsp corn, 2 oz guac, 5 tbsp salsa and 2 servings chipotle flavored tortilla strips! 472 cals and it's so good!

    Dijon Pork and Asparagus Saute'

    4 Thick cut boneless pork loin chops (about 1 1/2 lbs total)
    2 Tbs Chopped Tarragon Leaves
    1/2 tsp Salt
    1/2 tsp Pepper
    2 Tbs Olive Oil
    1 lb Asparagus, sliced at an angle
    1 bunch Green Onions, sliced
    2 Tbs fresh Cilantro
    1 Tbs Minced Garlic
    1/2 cup Chicken Broth
    1 Tbs Dijon Mustard

    Rub pork chops on both sides with tarragon, pepper and salt.
    In 12-inch skillet, heat 2 Tbs. olive oil over medium high heat until hot.
    Cook pork 5-minutes or until browned on both sides. Turning once. Transfer to plate.
    To same skillet add Asparagus, Onions, Cilantro and garlic. Cook for 3 minutes stirring to saute'.
    Add Chicken Broth and simmer 2 minutes. Stir in 1 Tbs Dijon Mustard.
    Nestle Pork Chops into asparagus. Cook another 2-4 minutes or until veggies are tender and pork is done.
