Healthy "Rhubarb Pie"
Rhubarb is in season so this afternoon I treated myself to a stalk from the garden over oatmeal and it was delicious. Here is what I did:
.5 cup oatmeal prepared
1 stalk rhubarb sliced. (52 grams)
3 strawberries sliced (71 grams)
1/4 C splenda. (If you prefer sugar go for it, just reduce the amount)
1 dash cinnamon
Place 1 Tbsp water in sauce pan with all ingredients other than oatmeal. Cook on medium until fruit is tender. ..add small amount of water as needed to keep mix moist. This water will combine with the sweetner and fruit to make a lovely syrup. Spoon over prepared oatmeal. Tastes so much like rhubarb pie to me!
Mine was right around 200 calories. I ate it for lunch with a big glass of milk for added protein.

I kept thinking about making a rhubarb pie. I always do in the spring...but I end up eating the whole thing over a few days and that is not how I want to spend my calories. This was such a great compromise and *so* delicious and filling.0

This sounds awesome! I've got quite a while before our rhubarb and strawberries come up, but that would be a great breakfast idea.

Rhubarb & bananas together is a great combo, no sweetener needed. As is rhubarb applesauce. I have three monstrous plants and rhubarb goes in everything during May, lol, plus stalks get chopped up & frozen for a taste of spring in February.0
