Oatmeal Cottage Cheese Pancakes

Eggs - White only, raw, 4 large
Baking Powder, 0.5 tsp (0.6g)
Pure Vanilla Extract, 0.5 tsp
100% Whole Grain Old Fashioned Oatmeal, 1 cup dry
Low Fat Cottage Cheese 2% , 1 cup
Truvia - Sugar Substitute, 3 packet

Directions:

Blend all ingredients in blender.

Spray skillet with cooking spray and cook just like"silver dollar" pancakes, a few small ones at a time.

Top with your favorite pancake topping!

They frieze really nicely... So I make lots at one time... Sometimes I add peanut butter & banana to the mix, then there is no need for a topping! Just pop them in the toaster and they're ready to go.
