If you are going to count your Macros then yes, you need to weigh your food to get an accurate count of what you are eating.

Ok I got a food scale but let's say for fats do I weight it in grams? How do I know how many calories that is? Mfp tells me my calorie intake should be 2000 split of 50% 20% protein and 10% fat should I change the 50 to 20% for carbs?

Honestly the specific ratio to set MFP is up to you. I have mine set at 40%carbs, 30% protein, 30%fat. However if you were to get really technical the right weigh to determine your numbers is not by percentages. Your optimal protein is figured by one gram of protein per pound of lean muscle mass you have on your body. Basically that means you take your weight and subtract your body fat to get the lean muscle mass. Then set your goals for protein on here as close to that number as you can.
In regard to weighing your foods in grams or ounces it just depends on how you log it. If it is entered in your food log in grams then weigh it in grams.

The calipers are probably the best realistic option you have. No they are not accurate but nothing really is unless you pay way to much money for the hydro test way. Just use the calipers and that will get you in the correct ball park.
