Carbs don't make you fat.... eating too many calories does. Are you in therapy for your eating disorder?

Eat the foods you like that give you adequate protein, essential fats and so on. You could for example aim for 75 grams of protein per day at 20% of your calories, 35% of your calories as fats and there's still 45% of calories left for carbohydrate.

First, you should be seeing a therapist or counselor to address underlying issues. Having professional support is key to a lasting recovery.

That being said... If you follow a good exercise routine, one that includes plenty of strength training and not just cardio, you can eat a lot and still be fine. If you're trying to put on weight, just eat. One trick I do when trying to put on weight is to drink a glass of whole milk and eat a PB&J between meals. Bread, peanut butter, and whole milk are all very calorie dense and can be taken in without being too filling.
