baking varriety of veges?! temp and seasoning

I have squash, yellow peppers, carrots, broccoli, eggplant....

What temp should I set my oven on and what should I add to it? my 13x9 is full of vege's

    Hopefully you cut the veggies in almost the same sizes... with the peppers being the largest simply because they cook faster.

    I did a mix of baked veggies today with dinner (broccoli, peppers, peas, green beans, three colours of peppers) and I baked them in the oven at 400 for about 15-20 minutes... I don't like the veggies to be mush so I cook them enough where they still have a bit of a crunch to them. I put a bit of olive oil, chopped garlic, Italian seasoning and as weird as it sounds a bit of Club House steak spice. Mix it up and pop it in the oven. Super yummy!

    I'd say 400F, uncovered, stirring every 20 minutes. I mix mine with olive oil, salt, pepper, and either thyme or oregano, altho I'm liking rosemary lately. You will probably have a lot of residual water in that dish, so be careful removing it from the oven. I'd line the dish with foil to keep the peppers from caramelizing onto the dish.
