I have been eating less calories from may 1st. I haven't lost more then 3 pounds. Feeling negative about my progress.

it's only may 11. average sustainable weight loss is 2lbs/week. you're exactly on target with that.

3 pounds in 11 days? That's actually great!! Best thing to do is slow and steady. You're right on target.

You made great progress...You didn't put it on in 11 days, it's not going to come off in 11 either.

You've lost 3 pounds in 11 days. GREAT.

How long did it take to GAIN 3 lbs?

This. As I got closer to my goal, I was lucky to get -0.5lb a week.

Then there's hormonal fluctuations, water retention, etc. That can make things even less linear. You might even gain weight temporarily if you get your period, are constipated, or eat very salty food. Just a heads up because I panicked a little.

And I've lost 5.5 pounds as of today total. So 2 more pounds in this week.

I took a look at your food diary. Why are your calories only set to 1000? And you earned 190 calories through exercise to bring today's total to 1190? That's not enough food. Did you put all your info into MFP? I'd recommend going back through your profile and changing up your goals. 1000 calories a day is not realistic, except for a very few select people.

And several of those days were under 800 calories. This isn't a good idea.
