Simple and quick lunch ideas?

I don't have a lot of time to spend on making lunches, so that usually means picking up food somewhere (which doesn't result in the healthiest choices). But I'm a die hard foodie, so does anyone have any ideas or links to websites with yummy, efficient, and healthy recipes?

    Hi:

    Start with your favorite foods and change them for a "healthier version 2.0".
    I prepare my lunch for the week on sunday afternoon ( a couple of main courses) and then store them at the fridge for the week. Every night , I pack my lunch box for next day and then log my food at MFP. It really does not take a lot of time.
    One hour shopping on Saturday , one hour cooking on Sunday and 10 minutes the previous night packing the lunch box.

    Left overs.

    I cook on sunday and eat left overs all week. easy peasy.

    I just had a super quick lunch. 1 tin tuna, lettuce, coleslaw and cottage cheese. 407 calories. 46.5g protein

    Wash some lettuce and chop up a bunch of vegetables and store them in the fridge in big containers. Cook some protein (chicken, hard boiled eggs, shrimp, salmon, beef, etc) and portion it into ziploc bags. Or use cottage cheese, canned tuna, shrimp, crab, chicken, sardines, etc. Make some salad dressing and put portions in little containers.

    Before work each morning, spend 1 minute throwing together a big salad. Add a piece of fruit if desired. Take it to work with a fork, toss with dressing and you're ready to eat at lunchtime.

    I like mixed greens with grape tomatoes, artichokes, hearts of palm, grated zucchini & carrot, green onions, celery, cucumber and olives.

    Or make enough food at dinnertime to provide leftovers for lunch the next day.

    Here's a link to pictures of 40 lunches this woman packed for her kids. They may be for kids, but I thought most of them looked pretty good and I've made some of them for myself in the past. Maybe it'll help spark some ideas.

    I keep cooked eggs, cooked chicken, or steak in the fridge to slice up for stir fry, quick meals, etc. I eat half can salmon, with veggies a lot for lunch.

    Cook a few one dish meals - chili, stew, soups, curries, meatballs, stuffed peppers, etc - on weekends and freeze them in individual portions. Super easy, takes one second to grab in the morning and microwave at work when you're ready to eat.
