Turkey Burgers with Zucchini

Ingredients:

•5 oz grated zucchini (when squeezed 4.25 oz)
•1 lb 93% lean ground turkey
•1/4 cup seasoned whole wheat breadcrumbs
•1 clove garlic, grated
•1 tbsp grated red onion
•1 tsp kosher salt and fresh pepper
•oil spray

Directions:

Squeeze ALL the moisture from the zucchini with paper towels. In a large bowl, combine ground turkey, zucchini, breadcrumbs, garlic, onion, salt and pepper. Make 5 equal patties, 4 1/2 ounces each, not too thick so they cook in the center.

To cook indoors: Heat a large nonstick skillet on high heat. When hot, lightly spray oil. Add burgers to the pan and reduce the heat to low. Cook on one side until browned, then flip. Flip over a few times to prevent burning and to make sure the burgers are cooked all the way through.

If grilling: Clean grill well before cooking and spray with oil spray to prevent sticking. Cook the burgers on medium heat about 5 minutes on each side, or until no longer pink in the center.

    I love my turkey burgers with zucchini. Served it to my friends while on vacation and they liked them until I told them there was zucchini in them. Suddenly, uh they were ok. SMH.

    Oh wow that actually sounds awesome. We only eat ground turkey so this sounds like an awesome way to spruce up our normal turkey burgers!!!!!!

    I make mine with any vegetables I have on hand. I made that particular recipe probably 5 years ago for the first time, and many times since, but I usually just finely chop whatever I have and mix with ground meat. It's usually a mixture of zucchini, spinach, mushrooms, squash, but my fiance always likes to add all kinds of peppers in the ones he makes for us :)

    I've made these before and they were so good. I love that website. It's my go to for most of my recipes.

    Never tried it with zucchini but I do enjoy it often with either kale or spinach and I always add some flax seed for that extra fiber and omega-3. I'll have to try it with zucchini thanks for this :)
