Clean eaters and vegan?

To everyone who likes the ‘eating clean’ thing, I’m curious as to what sort of meals you actually make on a regular basis. Especially if you’re vegan. Even more especially if you’re a college student or similar.

What do you eat when you’ve not got lots of time to cook? (or - more accurately, have a lack of interest in elaborate cooking)

I’m really interested in making some changes to my diet but I can’t do it if it means eating the same things everyday, or just bland, repetitive, boring stuff like rice and vegetables and beans all the time.

Genuine question here, I’m not trolling or anything.
