Leftover Pizza recipes?

Hi all. There are two slices of leftover pepperoni pizza in the fridge right now and the simple fact of the matter is I am going to eat them. I was wondering if anyone had any ideas or recipes on how to make them something more than just leftover pizza and possibly up the nutritional value. Thanks in advance.

I've never tried to do anything with leftover pizza, but a local place offers a "pizza salad", which is essentially a salad dumped on top of a crust. I'm thinking it's like eating a side salad with your pizza, but it's on top instead. I think it would work better with spinach than say something like iceburg lettuce.
You could also try sauteing up some veggies and putting them on top to give it some more micronutrients.0 -
You could turn it into breakfast. This is a little bit of trouble if you like a quick breakfast, but it's a suggestion either way. I've done something similar on a Saturday morning before.

You can put it into a freezer bag for another day. It reheats beautifully in the oven.0

That actually looks really good! I'm wishing I were at home now instead of at work.

Ah, I thought it was pizza in the fridge, not frozen! When we get delivery, I usually freeze the leftover pieces so they last for 3 months and we don't have to eat them right away.0 -

I thought I had, but maybe I've just been doing it wrong.

I usually just put frozen broccoli on it but I've been doing it wrong too! After reading this leftover pizza sorcery they're going face-to-face and getting panini pressed next time.0

I would add thinly sliced onion, mushroom and spinach (arugula or kale would also work), a little extra cheese, and put them on the grill.0
