ANYONE FOR A FRUITY DESSERT?

I invented this for my diabetic husband, but it works for me!
INGREDIENTS:
4 large red plums
3 sheets gelatin
sugar free drink powder (I used 1 heaped teaspoon of Bolero Strawberry)
180 ml water
A handful of fresh or frozen blueberries.
100 grams Greek yogurt
METHOD
Stew the plums until soft on stove top in a pan with the water and strawberry drink powder.
Blitz with a stick blender.
Soak gelatin in cold water till flaccid and then add to the hot plum puree
Stir in the Greek yogurt
Divide into 5 (dunno why 5 - but I like a little larger portion - praps thats why LOL)
Sprinkle a few blueberries in whilst its warm.
Set in refrigerator
Oh yummy! Sin free and delicious. Use any fruit you like - adjust the powder flavoring to complement.
92 calories per 5th of the mix.
