Made this for lunch and thought I would share. Very easy and simple. You can do so much with chicken and salsa. I did this perserving on the package. I used 3 oz chicken breast, cream corn, black beans, salsa, and baby carrots. Made beans according to package and threw everything in the crockpot. My original plans were to throw it on top of salad with more salsa or fat free ranch. But it was soupy and it ended up thickening up. It made enough that I don't need a sald. You can mix things up. The base is chicken and salsa. I recommend switching that up. Mango salsa is good too. You can add corn, beans, rotel, carrots or anything! Serve over rice, salad or even in a tortilla shell. You could make a burrito too. Mashed black beans and rice with it. Any day it would work. You can even make an omelet. Good protein too! You could also add a little chicken stock you make it a tortilla soup. Put some tortillas and cheese on top.
