How much oil is absorbed when you fry stuff?

I'm making potato tacos for dinner. I end up frying them in a skillet of oil. I'm wondering how much oil gets put into things when they're fried, so I know how many calories are in them.
How do you figure it out?
Could I weigh it before and after it's cooked?
Just assume it absorbed a standard % of the total oil it was in?
