I love fresh salsa. But, it's too early for fresh tomatoes where I live, so I'm still munching on what I canned last year.

I love it too but don't know how to.make it... the tomatoes always end up all mushy.

You need to start with a fresh firm tomato, which can be hard to find at the grocery store. Non-local tomatoes are typically picked green and allowed to ripen during transport, which often leads to mealy flesh. In season, try a farmer's market or roadside stand for fresh local tomatoes. Or grow your own. It makes a huge difference.

I wish I could serve this. My husband is allergic to raw onions. Bummer!

I just use Roma tomatoes, I never have a problem with them being mushy

A sharp knife also makes all of the difference with tomatoes! If you have good knives, it's worth it to get them sharpened every couple of years and then they last forever and can slice right through those tomatoes without squishing them!
