Portabella Mushroom Pizza
Microwave large portabella muchroom cap for about a minute just to pre cook it a little
Place cap in baking dish an fill with 1/4 cup cannallini beans that have been drained but not rinsed
Slice 3 grape tomatoes in half and place among the beans
Sprinkle about a teaspoon of dried basil on top.
Drizzle a 1/2 teaspoon of olive oil on top as well
Bake covered in a 375 degree oven for about 1/2 hour or until cap is tender
Sprinkle 1/4 cup low fat shredded mozzarella on top and bake uncovered until melted
Enjoy!
Recipe is for one serving but I have a big appetite so I will have two for dinner.
