For four portions

1 tsp Honey
1 chopped bunch Coriander
400g tin of Chickpeas
2/3 spring onions, chopped
.5 cup(s), Lentils - Cooked, boiled, with salt
2 medium, Carrots - Raw, grated
.5 Beetroot grated
1 Bell Pepper chopped
1 packet of cous cous (around 200g, i used the Moroccan one from co-op)
1 tbsp (33g), Tomato Paste
2 cloves of garlic, grated
Juice of one lemon
1 teaspoon cumin
1 tablespoon paprika
1 tablespoon mixed dry herbs
Chilli sauce to taste

Cook the lentils and couscous according to the packet, set to one side to cool.

Grate the veg into a large bowl, chop the bell pepper and add to the bowl and then add everything else.

Stir really well

Split into four containers, will happily sit in the fridge for a few days

Serve with chopped chicken breast, yogurt and sweet chilli sauce

Around 196 cals per serving before adding the above extras.

    Its nice enough that i will have it four days in a row, really filling, full of good stuff and low enough in cals that you can add nice things to it to make it a bit special.
