Most of my dinners are based around a veggie and a protein, such as:

Veggies: Asparagus, broccolini, brussles, grean beans or green salad
Meat: Salmon, talapia, turkey burger, steak, chicken, tuna etc. For both of these, experiment with spices and marinades! Everything doesn't have to be plain. We made a seared ahi tuna steak, and sauteed broccolini with garlic, sesame oil, soy sauce and sesame seeds. It was delicious.

I will add in a rice or potato (or mac and cheese if it fits!) if I want more.

Also, sometimes breakfast for dinner! 2 eggs, 2 veggie sausages is 32g protein for me.

I do a protein powder. IsoPure has great tasting ones that are high in protein, and have no carbs. Lots of veggies are low in carbs. Cheese and eggs. There are alot of really great websites with recipes for low carb and high protein. My favorite is peaceloveandlowcarb.com. She posts lots of really yummy recipes. My favorite is the Paremsan-Dijon crusted pork chops. I make them at lest once a week!

Here's an actual meal (like you requested) that you can cook with those goals in mind.

Slow Cooked Taco Chicken Recipe (Low Fat)
    Source: http://dhftns.com/slow-cooked-taco-chicken-recipe-low-fat/

    5 Pounds (80oz) Chicken Breast
14.5oz (411g) Can No Salt Added Stewed Tomatoes
2 Cans (21.5oz/610g total) Fiesta Nacho Cheese
2 Cans (20oz/566g total) Mexican Diced Tomatoes
2 Cans (30.5oz/864g total) Drained Whole Kernel Corn
4 Teaspoons (12g) Lower Sodium Taco Seasoning Mix
    1/2 Red Onion (Chopped)
    Nacho Blend Cheese (for topping)

Calories per serving (if you make 10 servings):
    Calories: 414.4
    Fat: 6g
    Saturated Fat: 1.3g
    Sodium: 452.8mg
    Carbs: 24.4g
    Fiber: 3.2g
    Sugar: 8.4g
    Protein: 65.7g

Take out your Chicken Breasts, trim the fat off of them, and then cut them into 1/2’’-1’’ pieces. Chop up your Red Onion half. Combine all of your ingredients into your slow cooker. Mix everything together. Cook on Low Heat for 5-6 hours.

He has a lot of other recipes that are right up your alley too.

Eggs, cheese. You don't want low fat if eating low carb.

If you like yogurt, mix a scoop of protein powder (Dymatize Orange Dreamsicle is my favorite for this) in a cup of plain non-fat greek yogurt. 11g carb, 49g protein, 0g fat. Add a tablespoon of olive oil if you are low on fat for the day. Mix in a granola bar if you want more carbs.
