Dressing for veggies

Im not a huge veggie eater, so I'm looking for a dressing that's low cal.

Aaaannnnddd go!

    Marinate sliced veggies with a quick vinaigrette of olive oil, red wine vinegar, Dijon, Kosher Salt, cracked black pepper, crushed garlic cloves, fresh parsley, basil, sage, and rosemary.

    Afterward, grill to attain grill marks on both sides.

    Perfect for Summer and works best with zucchini, yellow squash, and peeled eggplant. Add some already peeled and roasted red peppers into the mix and you have a wonderful array of colors and nutrients.

    I like salsa, hummus, ranch dip made according to package but use equal parts light mayo and fat free greek yogurt in place of mayo. You can mix honey and mustard together with a squeeze of lemon.

    Roasted Red Pepper Dip

    7 oz jar of juice packed (NOT OIL) roasted red peppers
    2 teaspoons of tomato paste
    2 teaspoons of balsamic vinegar
    1 large garlic clove crushed
    Dash of cayenne pepper

    Drain peppers, save juice. Puree all ingredients in a food processor, adding juice until almost smooth

    1/4 c is 16 calories-0g fat, 4g carb, 4g fiber, 1g protein

    All-time favorite (not incredibly low-cal...I'm not sure how low cal you want to go):

    1 shallot, diced
    1 tsp Dijon mustard
    3 tbsp balsamic vinegar
    1/4 cup olive oil

    Favorite low-low cal: low fat thousand island.

    I slice up sweet peppers throw them on a pan or small casserole dish then put a tablespoon of oil and a tablespoon of minced garlic(or to taste) litlle bit of salt, mix it all up, throw it in the oven at 375 for 20 mins.
    Super easy
    Only three ingredients
    Tastes great
    Very high in vitamin c
    Also works with bell peppers which are very high in vitamin c as well. I have it as a side for dinner almost every night.

    I like using light sour cream with a dry seasoning... Such as, lemon/dill. OR. Piri Piri OR Tex Mex. OR Greek seasoning. I like the pre mixed bottle dry seasonings. Blend/Enjoy.!!!
