Need Lunch Suggestions

Hello!
I was hoping that some of you might be able to give me some tips on some quick, easy and semi-healthy (or healthy) lunch ideas. I have been trying to limit my carbs during the day since I tend to eat more than I need at dinner and I go to the gym over my lunch break so time is a limitation for me. Recently I have been eating lunch meat & cheese along with hard bolied eggs and/or Pop Chips for lunch, but this is getting old and I was thinking about cutting chips next month so I need some new options.
I need something very easy, quick to put together, low in calories/carbs, keeps in the fridge well (preferably at least a week) and not too messy as I usually sneakily eat it at my desk, ha! I am trying to explore new foods, but I am still pretty picky (baby steps) . I do not eat too many veggies (I am working on this) and am still not the biggest fan of salad. Any tips or suggestions would be greatly appreciated.

If you have access to a microwave and don't mind microwaved food. I've brought eggs, ham, and cheese to work and threw together a little omelet.0
