Since I cannot wear my fitbit in the pool how would you suggest a fairly accurate way to log calories burned while swimming?

You can use an online calculator like this one (http://caloriesburnedhq.com/calories-burned-swimming/) and use the estimation for MFP... and again it will be an estimation as MFP has no way of figuring heart rate, steady state, vigorous effort, etc..0

Log non-step exercise (like swimming or biking) either in Fitbit (that's what I do) or in MFP—never both. Exercise logged in MFP overwrites your Fitbit burn during that time.
