Blueberry pancakes (250 calories)

Gives generous serving of 5 4inch pancakes for one person. Pretty flexible recipe so change up flavourings and ratios of yoghurt to flour if wanted to find what works for you. You could also probably try subbing the flour for blended oats or protein powder for more fibre or protein.

Ingredients
• 75g fat free plain greek yoghurt
• One egg
• ½ tsp vanilla extract
• Pinch salt
• 2 tsp sugar (or other sweetener)
• ½ tsp baking powder
• 15g flour (about 4 tsp)
• 70g blueberries
• 2 tsp maple syrup

Method
1. Separate the egg yolk and the egg white. Combine yolk with yoghurt
2. Add vanilla, salt, sugar to yoghurt mixture, and stir thoroughly
3. Add baking powder and flour
4. Whip egg white until stiff and creates peaks
5. Fold egg white into batter until fully combined
6. Add blueberries to batter
7. Cook in non-stick pan on medium heat. Will probably need a long time to cook (close to 10 minutes) and will be closer to brown than to gold in colour. Ensure that its cooked through by seeing if the edges seem solid
8. Serve immediately with the syrup
