The secret of why sugar or carbs are so fattening...

Because they are awesome!!!
I wish to present exhibit A. below...
Yes refined sugary treats or high carb foods are generally well known for being calorie dense whilst having poor satiety values and even causing water retention (Oh noes) but they are simply inanimate objects, yummy appetizing objects but inanimate objects they are, no more, no less. They are not the devil or even the culprit when it comes to overindulgence, that lands squarely on your shoulders and yours alone.
No matter what your dietary preference is self-control is paramount. Be it whether you are able to eat in moderation or if you choose to remove temptation from yourself because you haven't developed the skills to resist in overindulging.
Hopefully those that suffer from over-indulging learn to stop blaming inanimate objects for their habits and develop a healthy relationship with food...a good step in the right direction is to stop making it a scapegoat for poor decisions.
Be kind to food as it is generally awesome.
Footnote:
1. When people are in a caloric deficit, they always lose weight.
2. When people are in a caloric surplus, they always gain weight.

Or choose to limit heavily refined carbs because we simply don't choose to use our calories that way.
Or choose to limit heavily refined carbs because it's easier than battling with self-control.
But yes, I agree. self-control is important. Whether you choose to use our self-control to eat in moderation, or choose to use it to to limit or eliminate heavily refined carbs.0 -

I wasn't having a go at anyone's dietary preference, if it is healthy and works for you, go for it.

I swear that when I am the store sugary treats jump into my cart all by themselves. I just kind of discover them there. Then I don't want them to feel bad or anything. So I let them go home with me.0
