Tropical Kumquat Cake

I have a kumquat tree (it came with the house) and about all I ever do with them is infuse them in water. Now and then I bring bags of the things to work and give them to some of my kumquat-loving coworkers. One of them made this super yummy, super moist cake with them. She got the recipe online here.

Ingredients
  • 3 eggs
  • 2 cups sugar (this could probably be cut with Splenda)
  • 1 cup oil
  • 1 teaspoon cinnamon
  • 1 1⁄2 cups chopped kumquats
  • 1 cup chopped nuts
  • 1 (20 ounce) can crushed pineapple, well drained
  • 3 cups all-purpose flour
  • 2 teaspoons baking soda
  • 1 teaspoon salt

Directions
  1. Preheat oven to 350°F.
  2. In a bowl, beat eggs, sugar and oil.
  3. Fold in dry ingredients and mix well.
  4. Add kumquats, nuts and pineapple.
  5. Pour into greased and floured tube pan.
  6. Bake 1 hour and 15 minutes.
  7. Cool, remove from pan. Serves 12.

Very carrot cake like in texture. The citrus flavor from the kumquats along with the pineapple really shine in this recipe. She dusted the cake with powdered sugar. Definitely not a diet cake, but my thoughts on cake are if you are going to make cake, make cake, but don't make it a lot and eat it in moderation.

If you've never had one, a kumquat looks like an very small elongated orange. The peel (which is edible) is sweet and the pulp is sour like a lemon.
