Vegetarian Stuffed Peppers
YUM!
So I searched my kitchen for anything to put together for a healthy dinner last night. Lo and behold I found items that could make a pretty mean stuffed pepper without the meat and less calories.
I wish I had brown rice instead of white (my diabetes agrees) but it turned out delicious!!
4 peppers (We got the pack of 2 red, an orange and a yellow) we had 2 each bc I wasn't sure if it was going to be filling enough without any type of sides - but it was!!)
1 can black beans
1/2 onion (you could prob do a whole but I'm not a fan)
1 Cup white rice cooked
chopped cherry tomatoes
Salt and Pepper to taste
Cut and de-pit the peppers and place into boiling water for 3-5 minutes until soft
Preheat oven to 350
sautee chopped onion in vegetable oil (I had canola) until browned - I then threw in the beans and tomatoes to warm them over low heat
cook rice according to box/bag
in a large bowl combine onion/beans/tomatoes/rice
scoop into the peppers and bake for 30 min or until browned
*I did put a slice of cheddar cheese and sprinkled breadcrumbs on top for extra flavor.
serve with fat free ranch dressing (YUM)

I make one very similar to that except I add MorningStar Farms Grillers Crumbles. You should give them a try if you feel like making them again!0

I like to eat recipes that are primarily vegetable based, so I love this one http://www.slenderkitchen.com/cheesy-enchilada-turkey-stuffed-peppers/.
You can easily swap out beans or crumbles for the meat, or even double every vegetable and leave the protein out.0
