Spaghetti Squash Lasagna

This is by far one of my favorite healthy alternative recipes. Found it on Pinterest and it turns out wonderfully.
What you need:
1 spaghetti squash
Spaghetti or tomato sauce
Shredded cheese of your preference(i used colby jack)
Ground turkey if you would prefer meat.
Olive oil
Italian seasoning
Directions:
Preheat oven to 350.
Poke holes in the spaghetti squash and stick in the microwave about 5 minutes to soften.
Cut the spaghetti squash in half and scoop out the stringy seedy insides like you would for a pumpkin.
Once the squash is cleaned out, rub the inside of each half with about 1 tbsp of oil. Sprinkle with Italian seasoning.
Set the halves on a cooking dish (like a cookie sheet or baking pan) and put in the oven 50-60 minutes.
While the squash cooks, brown your ground turkey and stir in your spaghetti sauce. Make sure it's mixed well.
Once the squash is finished, use a fork (or whatever you prefer) to pull along the edges of the squash. It will pull apart to look a bit like noodles.
Scoop about half of these "noodles" into a baking pan (original recipe called for 9x11, I used an 8x8).
Layer half your sauce, followed by half the shredded cheese. Repeat noodles, sauce, cheese until you have a second layer.
Turn your oven up to 375 and bake about 45 minutes (mine is usually finished about 35 minutes, so check on it frequently).
Remove from oven and serve...,I would say it yields about 4-6 very filling servings.

Sounds good! I add steamed summer squash and broccoli to pasta dishes often, but have never tried spaghetti squash. Also, puncturing the outer shell and microwaving to soften before cutting is a good tip. When I use butternut squash I always have trouble cutting through the tough shell, so I can use this for them as well, or just puncture them and bake them whole then slice once they soften. (My family did not eat any varieties of squash growing up, so I learned to like it and cook it own my own as an adult. That's why I didn't know this trick.)0

@artlover47 Same,I never had much squash growing up. Only reason I know the trick is by searching online in healthy recipes. But yeah, spaghetti squash is worth the try. Good luck0

4-6 servings? I often eat half a spaghetti squash by myself (small one, granted)... lol. I haven't tried it as lasagna though, I typically just mix it up with the meat sauce.0
