I'd say check my diary. It's not 1000+ every day but it's not unusual and all you'd have to do is up the portions slightly for a guy rather than a fairly small (but active) woman.
Favourites are:- Stir fries - noodles or rice with meat and veg
- Curries (Indian or Thai) - rice, meat, pulses, coconut milk and veg
- Pulled pork with sweet potatoes and (you guessed it) veg
- Whole/half roast chicken with a couple of baked potatoes, butter and salad
- Pasta bolognese
- Pasta with chicken, bacon and loads of vegetables
- Beef/pork/turkey and black bean chilli with rice or sweet potatoes
There are hundreds of thousands of variations on the theme of meat, veg, fat, spices and starch.0 -
Excellent thanks for the info.0

Any time!
Today's 1000+ calorie lunch: 100g rice, 1/2 tin chickpeas, 250g pulled pork and a salad with a little olive oil and lemon juice - total 1090 calories (106g carbs, 68g protein, 42g fat).0 -

Sounds very similar to what I do to get a lunch over 1,000 calories.
I would normally make a massive chicken curry, spag bol, chili con carne and load up each one with loads of veg with rice, potato be it sweet or normal, spaghetti or sometimes pasta. Add in lentils and chickpeas. I would normally have enough for 3 days worth.0 -
