Breakfast with a twist, yummy!
I haven't added a recipe before so hopefully I'm doing it right.
2 Red bell peppers, cut in half lengthwise, seeded
1 tsp olive oil
1/3 cup finely chopped ionion
2 small carlic cloves, minced
1 cup shredded low-fat sharp cheddar
1 tsp Italian seasoning
4 eggs
Microwave peppers, covered, cut side down on high 4 minutes. Heat oil on medium & cook onion and garlic approx. 4 min. Cool onions approx. 1 min stir in 3/4 cup cheese and spice.
Divide onion & cheese among peppers pressing to create a hollow for egg in center. Break 1 egg into each pepper. Bake at 400F 20 min. Top with remaining cheese. Serves 4
Per serving: 186 cal, 15 g protein, 11 g fat, 8g carb, 486 mg sodium, 2 g fiber.
