Cocoa and Orange Muffins
When you are on a diet, it’s good once in a while to satisfy your taste buds and senses.
The problem of handmade low fat foods is often: “Low Fat – Low Taste”.
This is not satisfactory to me.
But if you could eat some delicious sweets with low fat, it wouldn’t be better? I say YEEEES…
So, today I want to share with you one of the lightest muffin recipe that I taste.

I try to translate as good as possible but if you have some misunderstandings or doubts, write to me! You can also correct my expressions if they’re wrong, so I can improve my English! Thanks.
Now let’s go to the ingredients!

250 gr type 00 flour
250 gr sugar (I prefer brown sugar)
400 gr low-fat milk (at room temperature)
100 gr bitter cocoa powder
Grated rind of three big oranges (possibly organic)
1 teaspoon of cinnamon (or less, if you prefer)
1 pouch of baking powder
Mix together dry ingredients (flour, sugar, cocoa powder, cinnamon) in a large bowl and then the grated rind. Now you can add the milk in a slow way. Use a whisk to blend thoroughly all mixture and to avoid the formation of lumps. Finally you can add the baking powder and make sure it’s well incorporated.
With these doses I prepare 16 muffins. For avoiding to use butter for metal molds, I prefer to utilize paper molds. But the paper is not enough resistant to the compound load (it’s very dense!), so I put the molds of paper inside those of silicone.
Fill every mold for an half. Arrange them in a oven dish and bake them at 180°C for 30 minutes.
Before serving you can sprinkle with powdered sugar.
