no crust Spinach Pie
Made this and its unreal - If you don't line spinach then don't bother
500g frozen spinach - Thawed and squeeze out water
4 eggs
375g light ricotta
150g light cottage cheese
Salt
pepper
All spice
Paprika
2 cloves crush garlic
50g fine grated Parmesan cheese
Mix and and then bake for 30 min or until cooked and not soggy in middle
Next time ill add some lemon rind or juice
big pie made 6 slices - Great macros too
212 cals, 22g protein 5g carbs and 10g fat
Heaps of vitamins too

Wouldn't this just be a crustless quiche?
I've never made quiche so I don't know the actual ingredients in one.
It's almost frittata like as well...
Sounds yummy, needs waaaaaay more garlic tho =P
Also, OP, I'd saute the garlic a little bit in olive oil.

I make something similiar, but use a mixture of feta and parm ~ and use nutmeg as my spice ~ kind of like spanikopita flavor0

Made this in the half hour i had to get ready before work
If i had bit more time i would have saute the garlic and onion
but once its all cooked its all good either way - Saved on oil calories too and didn't need any more fat as the ricotta and cottage cheese
But if you macros allow then by all means get some olive oil in that bad boy
Not really a quiche - that's more eggy and and its all about the crust on them
Think Greek spinach pie with no pastry
Tweak the recipe to suit either way its banging good
Might even add some Lebanese Sumac spice next time for that lemon kick
Fresh parley and basil would also be good
Feta cheese too instead of the cottage cheese
Options are endless

I love nutmeg in savory foods, its a must for bechamel sauce0
