Left overs add to regular dishes? And not trying to be facetious here. We shifted to adding leftovers to our breakfasts and it's been wonderful.

As an example, have some fried rice from the night before and put it in an omelet, or say, have a whole wheat waffle with something savory instead of sweet, especially if it's a little bit of both, like some pork with orange sauce from the night before. That sort of thing. It's really added more complexity to our breakfasts without having to do so much cooking early in the morning to get it, you know?

I agree about planning portions such that part of dinner is going be breakfast or lunch the next day. For breakfast, I also like cottage or ricotta cheese with sunflower seeds or sliced almonds. Or pinto beans with tomatoes or salsa. Or leftover rice with some cheese.

egg whites and whole wheat toast keep me going for hours. you can always chop in some onion, tomato or celery etc. to make it more like an omelette. i make whole wheat muffins (olive oil, 1% milk, egg white) and freeze them. you can pop one in the microwave or just take it out of the freezer before bedtime. you can add blueberries or any fruit, nuts etc. when first baking, too.

Variations on leftover rice and potatoes with vegetables near to hand. Fried cabbage, cumin or curry spices, mashed potato - bubble n squeak never tasted so good. Rice mixed with milled seeds and yogurt and a portion of fruit. Nothing beats eggy fried bread on days when I need the calories but don't want the bulk.

Vanilla Greek yogurt with PB2, and Grapenuts cereal mixed in.

Lemon yogurt, raspberries, Kashi GoLean and slivered almonds.

Oats made with milk, stir in peanut butter or chopped nuts
