Love this for a high protein and vegetable feed

1kg lean beef mince
1 large brown onion - Chopped
3 cloves garlic
2 carrots - Chopped
2 stalks celery - Chopped
1 small parsnip
2 small potatoes
1 other smallish root vegetable such as kohlrabi - Not sure if you get those in the states
1 can corn kernels
big handful of frozen peas
250g packet of frozen spinach
2x tablespoon of tomato paste
beef or chicken or veggie stock - i used around 1 liter, salt reduced, if using full salt then don't add much extra until its reduced as you don't want it to salty


Start to brown the mince in a bit of olive oil

While bowing chops all veggies similar size, small is nice

When beef is browned throw in onion, celery, garlic and carrots. start to soften them

I de-glazed the big pan with a tiny splash of red wine but not needed at all can do this with some stock.

Throw in all other vegies

mix in stock and tomato paste

Season with salt, pepper and chilli powders to taste, i added a teaspoon of smoked paprika too as i felt like it.

Cook for 30 min lid on to reduce and thicken up.

Should be like a thick pie mix so may need to take the lid off for 10 min and cook it down

this made like 10 serves or so
