hello!!
looking at bulk making pasta salad how long can you keep cooked pasta in the fridge.

    Well, my grandmother is 100% Italian, and she always stored her pasta she had left over from Sunday family dinners for 4 days (plain). If she had sauce on it, I think she kept it for 2 or 3 days

    I think plain pasta should be good for about 3-4 days.

    Pasta salad with vinegar can probably stretch a little longer-depending on the other ingredients such as cheese and veggies. I've kept very cold pasta salad (with dressing) in the fridge for 4-5 days and it still tasted awesome. I refrigerated in small containers though, and my fridge is super cold

    If it's with a mayonnaise base then j wouldn't go past maybe 2 days, 3 tops.

    according to the food health and safety class I took at the county health department, it's not the mayo you need to be wary of causing bacterial growth. Its the other things- chopped veggies, meats etc. Cross contamination is more of a problem than mayo itself. It too has vinegar which is a natural bacteriostatic(ie prevents growth- but doesn't kill. though straight vinegar can be bacteriocidal)
    when you make a pasta salad- be sure utensils are clean, use different knives and cutting boards when cutting the veg and any meats added. or wash and sanitize between them(this again according to the county health dept).
    the key is to keep it cold or keep it hot. lukewarm food is the "danger zone".

    having said all that- i'd go with 4 days for a pasta salad with vinegar based dressing! :)
