Healthy Fish and Chips

Per Person
1 peice of fish (cod/haddock/tuna)
1/2 packet flavoured cous cous (made as per instructions)(or use plain cous cous and flavour ir yourself)
1 baking potato or sweet potato
1 tblsp oil (max)
(and a food bag)

Chop up the potato of choice and put in the food bag, add the oil to the bag and smoosh around.
(I sometimes add chilli flakes for a bit of zing)
Place on a non stick tray and bake until golden.
In the meantime, coat the fish in the cous cous mix and bake until crispy.
Serve with a salad

    Hmm does the couscous stick to the fish well? I usually just use panko crumbs.

    I make fish sticks using tilapia cut to size and panko. Sprinkle the fish with salt and pepper, dredge in flour (shake off excess) then coat in 1 egg, lightly beaten. Dredge in the panko. Lightly coat the pieces in cooking spray then bake on a wire rack over a cookie sheet at 425 for about 8-10 minutes. Served with oven baked fries and some low-fat tartar sauce and I almost feel like I'm eating fish and chips at the pub.

    Ok, the beer would be nice too. B)
