Eating in the heat?

It is SO HOT in SC all of a sudden. And my appetite plummets in the heat. What do you eat in the heat? I'm just not feeling it.

    Fortunately or unfortunately, my appetite does not change in hot weather. Sometimes I'll crave lasagna or stir fry in the middle of july.

    I also don't eat much when it's hot. My problem is that I stay inside, where it's cool. If I stayed outside all day, I'd be at goal weight in a month, lol.

    That being said, when in the heat, I drink lots and lots of water. I eat fruit like it is going out of style and I really enjoy smoothies and frappacinos.

    As far as cooking during the summer, I try to employ my crockpot as often as possible. The oven heats up the house and me.. crockpot saves on energy times two and on my pissy-hot-***** attitude.

    I eat a lot of salads and fruit especially watermelon. I also like cold pasta salads. Nothing hot.

    We would eat the hottest foods in the am like eggs, pancakes, etc. All day you can make smoothies with whatever you like, You can use a slow cooker to make something you can eat with a cool side like pulled pork in a slow cooker is god, you can have a salad on the side. Or make fruit cabobs for a side and make a roast in the slow cooker for sandwiches. Taco's, nachos are good. We will even eat a fruit spread and peanut butter and jam. Wraps with anything you like, tuna, chicken. I will make a cesar wrap one day, another day with salsa and cheese, to mix it up. You can make a wrap with peanut butter and banana. you can make "salsa" with berries and fruit and make "nacho chips" by brushing oil & cinnamon on tortillas and baking them. chili on a bun, you can do chilli in a slow cooker too, subs. I make a huge cheese & cracker tray. It's nice too if you bbq or make wraps you can wrap it in lettuce instead of a wrap. make boiled eggs in the am and eat them in the pm. I would just prep in the am when it's a bit cooler. But as long as you get good nutrients in the day time I don't see a problem with fruit as a side for dinner. Pinterest is also good for ideas :) They have neat "freezer cooking" you just throw it in he slow cooker, fab meals on the go.

    I'm a weird one--I love extra spicy chili in the summer. My husband thinks I'm nuts.

    Sometimes a hot summer day can decrease my appetite, and when it does, I usually go for cold sandwiches, salads, or almost anything on the grill (I love grilled veggies when I'm not in the mood for meat). Those are also the days I'll pick at fruit and raw veggies without a real meal plan.

    My favorite, favorite, favorite summer food is this salad (which my great-grandmother called "gazpacho" even though it isn't):

    Dice up a lot of tomatoes. No, seriously, a LOT. Ten? Maybe ten tomatoes. Or twelve. Whatever.
    Dice up a lot of cucumbers, but maybe not quite so many. Maybe five cucumbers. Or maybe you want to reverse these proportions because you're a cuke-loving weirdo. Whatever, maaaaaan.
    Dice up a reasonable amount of strong red or yellow onion -- one or two whole onions.
    Whisk together about a cup of balsamic vinegar, a quarter-cup of good olive oil, a tablespoon or so of sugar (or Splenda or whatever granulated sweetener you use), some freshly ground black pepper, and maybe a little salt.
    Pour the dressing alllll over the veggies, stir thoroughly, and refrigerate (stirring every hour or so) overnight or as long as you can wait.
    Try not to taint it with your tears of joy while eating.
    Next time, play with the proportions of every ingredient until it's exactly to your taste.
