Family Friendly Veggies

I have a huge family! 7 kids between my husband and I (his, mine, and ours situation). So lots of different taste buds and the age range is 15 down to 4 (the youngest being the only girl). I struggle all the time in making sure I make recipes that include lots of veggies that my children love. So I'm going to share one that I made today (that so many people don't think about) and then I'd love for everyone to put a recipe that has lots of veggies that most children will like (my 15 y/o likes steak and pizza and I swear that's it).
Salsa
5 roma tomatoes
1 large yellow or sweet onion
2 Serano peppers
1/2 bunch of cilantro (or less, I love the taste of cilantro so I used more than this)
2 limes (just the juice)
3 cloves of garlic chopped
season to taste with cayenne pepper, sea salt, pepper, garlic powder, chilly powder
Put veggies in a blender and blend until consistency that you want (or you could chop everything up and have more pico style). Squeeze the juice from the limes and add the seasoning sparingly and then blend to mix it up well. The flavors will meld together the longer it sits (it will also get a bit spicier). You could also add pineapple or mango or peach chunks for fruit. For more veggies you could shred carrots, zuccini, even celery. Buy veggie chips and this is a pretty good little snack to get your kids to get at least a serving of veggies in.

I have found that when introducing new veggies to my kids (6 and 4) I prepare it with minimal spices/sauces and serve it in a fun way. Like kabobs, or we eat with chopsticks. Sometimes I will lay their plates out with a picture.
My kids are more interested in at least trying food when it looks like it might be fun to eat. The next time I make it, they recognize it and are more open to eating it.
We also have a stict rule - you eat the same number of bites of each "dish" (protein, carb, veg) equal to your age in years (so, 6 bites and 4 bites respectively).0 -
