normally I come pretty close to my sodium goal that mfp has set. Yesterday I ate at a deficit but ate almost 1000mg above my sodium goal (!!!!). Today I have gained almost a pound? Could just 1000mg of sodium cause water retention?

Yes. And daily fluctuations of +/- 3 pounds regardless of sodium are normal.

MFPs "goals" for those things are minimums and you don't need to worry unless you have medical issues..but yes it could cause water retention...just drink lots of water through the day and it should be fine.

As well that "almost a pound" could be a normal fluctuation...

It could be. It could also be another normal fluctuation. Could be hormones... who knows.

Just keep on keeping on, drink some water and try not to worry about a single pound.

I just don't normally have much of a fluctuation unless it is that TOM. I've been losing slowly but steadily for a few months and I feel like I've learned some of my bodies patterns. But maybe not!

I stopped eating quorn because of the high sodium content. I've noticed much better weight loss since.

Excess sodium and/or strenuous exercise both cause weight bumps for me. I'd try to stay below your sodium limit and not be concerned with daily weight fluctuations (assuming you're below your calorie goal).
