Lunch is by far the hardest meal for me to plan. I'm looking for some inspiration! What are your favorite lunch recipes? Any suggestions for me? I like quick, simple recipes with as natural as possible ingredients.

Right now with a lot of fresh fruits in season I make a yogurt parfait for lunch. I use 1 cup of low fat/calorie plan or vanilla yogurt along with some blueberries, sliced strawberries and raspberries. So good

This week I'll rotate between this Shrimp & Soba noodle salad (http://www.canyoustayfordinner.com/2013/03/18/soba-noodle-and-shrimp-salad-with-peanut-ginger-dressing/), Crockpot chicken with snow peas & rice medley, and chicken plus whatever I get in my CSA (farm share)

Last week: baked kielbasa with roasted veggies (onion, aspargus, acorn squash), crockpot chicken quarters with buckwheat, roasted beets, and sauted beet greens. I had seafood chowder (homemade) as well

Week before: Cumin carrots & chicken from the crockpot with homemade salsa verde & brown rice, turkey quinoa chili

Lots of things from skiinytaste are great (skinnytaste.com) - I didn't like the picante chicken & black bean soup or the chicken pot pie soup.

I cook up a recipe that has 8 servings and I freeze half since I'm solo.
Whatever you have for dinner, eat for lunch.
