Meal Prep

So, this meal prep thing is working out really well for me. I pre cooked chicken on Sunday for lunches for the week, weighed it out and put it into separate tupperware containers for each day of the week. Then today I started wondering "is this going to be good still on Thursday or Friday? Google says cooked chicken is good in the fridge anywhere from 3-7 days. Anyone have any experience with this? Thanks in advance.

    Seriously, a couple hours on a Sunday and the whole week is good to go. Makes Life as a mom of 2 busy kids with a full time job SOOOO much easier. Thumbs WAY up to meal prepping!

    How do you work that with defrosting? Do you cook it and then freeze it?

    I cook it, usually shred or chop it, and portion it into servings of choice. If I want to throw some on a salad or something, I can take it out in the morning or the day before, or I can throw it in the microwave for 20 seconds.

    I also freeze everything. I make different varieties of curries, stews, chilis, soups, casseroles, meatballs, burgers, nuggets, burritos, sauces, etc. Just make a dish, portion it out and freeze it with the calorie count labeled on it. I've been doing it for 8 years. If I didn't, nobody in my household would eat appropriate meals. I don't cook during the week, I assemble :)

    Chicken I don't let go past four to five days. After that it starts smelling a little "gamey" and I don't want to risk it. Try making some vegetarian options for later in the week if you are concerned about food safety, or freeze up what you can. Planning ahead is a lot of fun, but I've always prepared ahead and frozen everything.
