My biggest issue is working the night shift. I wake up at noon and work till 3am or even 5am. This is breakfast for me and dinner is 10pm.. is that ok or am I doomed to fail?

Really the most important thing about living with a shift like that is making sure that you get enough sleep. Eat whenever you want. Two meals a day sound fine to m.0

If you feel good then it's working for you. If you feel tired, find a way to get more/better sleep. If you feel hungry, take some calories from a meal to make a snack. Etc etc. There is no evidence that eating more or fewer times a day or eating at or not eating at certain times of the day have any effect at all on weight.0
