Calorie counts: slightly lower or too high

I've been having an issue with having a balanced diet that gets my goal amounts especially in relation to carbs and potassium. This is particularly to me with my insanity and couch to 5k routine (preventing muscle soreness and eating back my calories). I feel like trying to boost my potassium and carbs to get somewhat close to my goals pretty much puts me in the red elsewhere (tonight vitamin a, c, and cholesterol). I feel like being too low and being in the red are indicators of poor performance but maybe I'm thinking to literal about it.
I'm still feeling out myfitnesspal as I'm new and I'm hoping to get a good routine going but any feedback or thoughts are appreciated
