    There was a glowing multiple page news story a few years ago about my kids' school cafeteria. The new chef was bringing in all kinds of fresh produce, serving a lot more vegetables, and in general providing a much greater variety and quality of food. Parents, teachers, and story author were all happy.

    What got left out was how much of the food went straight into the trash because the kids generally hated it, how much the food costs went up, and how many more kids brought their lunches from home rather than eat kale.

    I would totally have loved this to be available when my kids were at school, but it would only be likely to work for those children who had been introduced to vegetables at home, it is very difficult to change a person's eating habits. For my kids it would have been a god send because they love vegetables, they ask for more broccoli and both of them are quite squeamish about meat and only eat small amounts now and then.

    Also, I would only support it if it were a vegan and a vegetarian option with also a meat and fish option, because I don't think forcing veggie diets is a good way forward and would only cause resentment.

    There have been other schools that have changed their lunch menus to fresher healthier options and had similar results. Vegetarian / non-vegetarian isn't the issue. Unbalanced nutrient poor junk lunches are the problem.
