I center half of my meals around tofu and my George Forman grill. I'll dust it with Moroccan seasoning or whatever sounds good, then throw it on for about ten minutes while I get everything else together. Sometimes, I'll make enough brown rice for the week, and have tofu rice bowls with veggies (lately eggplant, zucchini, or peppers), sesame seeds, and nori flakes.
I'll also do tofu tacos with corn tortillas and cucumber salad. I'm not veggie due to medical stuff, but I really like tofu on that little infomercial grill! If I'm in a hurry, I'll grill up a piece while I'm getting dressed, and eat it on the go! And you can grill just about anything on it, including all your veggies and fruit.0 -
I love veggie burgers made with chickpea patties! You could eat them crumbled over salad or in flatbread for lower calories. I can't remember the website I found the recipe from, but if you Google "Whip It Up Wednesday Chickpea Tahini Patties" it should come right up. I think it was called Cooking Whims. I make 6 patties from the recipe at 152 calories each, and they freeze really well.0

Why not just google the topic vegetarian recipes? You will get plenty of data, usually including nutritional info.

I keep Kosher, but we eat a lot of vegetarian. Pinterest is my best friend when it comes to recipes!
Also, Oh She Glows (www.ohsheglows.com) is a vegan food blog, but it's still freaking delicious.

Savory breakfast: Fried egg over a portobello mushroom cap with sautéed spinach in balsamic constant a little olive oil.
Sweet breakfast: 3/4 cup dry oats with 1 T of unsweetened cocoa powder and 2-4 packets of stevia sweetener. Just microwave it all up!
Lunch: 1 blackbean burger on 1 sandwich thins roll with spinach and cherry tomatoes. Roasted green beans on the side (instead of French fries). Finish it off with a treat (a funsized piece of chocolate, a piece of dark chocolate, fruit, etc.)
Dinner: cauliflower rice (google it; amazing!) with 1/2 can black beans, leafy greens (Kale, spinach, etc), sautéed onion, and 1/8-1/4 cup of salsa or crushed tomatoes. Makes a delicious, healthier burrito bowl!0 -
