How do you eat enough calories but keep it healthy? I'm finding that when I'm on track I tend to be "TOO" on track. I'm done planning my meals...I made smart food choices...it's enough food to make me full but oops--not enough calories. Does that make sense?

I get what you're saying, but remember you can fill that last 100 calories with a bit of chocolate or whatever you'd like. You will still lose.
But honestly, I'm having what many people consider a "healthy" day today (I did a little damage yesterday and want to get my mind straight) and I'm hungry. Are you weighing all your food on a scale? Accounting for cooking oil and drinks?0 -

I cut out sugar and grains and made it up with Fats. Fats being over 200% more calorie dense than Carbs makes it easy for me to hit 3000 calories a day plus after 30 days most of my crippling arthritis pain went away.0 -
as long as you hit your proteins and fats you can eat whatever (even junk) you want within caloric limits and lose weight.0

First, make sure your definition of "healthy" isn't too strict. Second, make sure you're accurately logging your food. Sometimes we're eating more than we think. I mean... I've seen a single chicken breast that was actually four servings worth of meat. That bird had big hooters!
Then, if that's all taken care of, add just a little bit more to each meal and snack. An extra ounce of chicken, a larger serving of vegetables, a smidgeon more olive oil, and extra slice of cheese... they all add up.

Assuming you're logging accurately (accounting for oils and weighing solids/semi-solids), then I would say it sounds like you "overcorrected," if you will. If you've switched to low-fat stuff, go back to the "regular" fat version of a few things. Play around a little so you can find the balance, and make sure you work in treats if you like them!

I think it all boils down to what YOUR goals are.
My goal is to lose 0.5kg a week. So if I am under my calorie goal, daily, I will lose more than that in the week. I don't really bother being super strict as long as I am satisfied! I think as long as you're satisfied then you are doing fine!
For me, it's all about balance & making a realistic lifestyle change. You don't have to be perfect! Just do your best.
